Reconnaissance is a vital part of any successful mission. The scouts of our military get the lay of the land and bring back intel — much like the scouts of a beehive that seek out the best sources of nectar for the colony.

We honor these explorers with Scouts Out, an easy-drinking Honey Saison brewed with 180 lbs. of Savannah Bee Co. honey. French and Belgian yeasts create a sweet-and-spicy aroma with the essence of clover and dried apricots, and notes of apple and pear are balanced by earthy Czech Saaz hops, leading to a crisp, dry finish. Stone Ghost Hammer IPA

A fermenting beer never slumbers. Consequently, there is always scattered activity tending our precious beers throughout the dark hours. In these late nights and wee hours that hallowed responsibility falls to the shoulders of the overnight Brew Crew. These brewing soloists brave the long nights, often alone, to do what needs to be done. Most areas of the brewery are dark or in shadows. Throughout the night the cellars resonate with the occasional knocking of expanding and contracting pipes. It can be a bit spooky to hear the brewery creak and groan as if possessed by a spirit randomly knocking about with a mallet. This IPA, liberally hopped with Loral™, honors our intrepid overnight team by naming it after their mischievous poltergeist companion – the Ghost Hammer. (Richmond, VA)

Southern Tier Lake Shore Fog

A faint crescent moon hangs low in the azure sky as the last pinpricks of starlight disappear into the brightening day. Quiet, repetitious sounds float up from nearly invisible waves lapping the beach. A cool mist hangs at the water’s edge, obscuring the early morning light into a luminescent, golden glow. One can’t help but feel a sense of easy calm in this magically surreal moment, as if caught in a universal shift, a sort of heaven-on-Earth amid the Lake Shore Fog.

Three words to describe Lake Shore Fog: hazy, juicy, refreshing. Three more: aromatic, delicious, golden. A year of brewing development has captured these attributes and rolled them into a brilliant new beer. We are using absurd amounts of hops, dry hopped on 4 different days, making it a juicy flavor and aroma bomb. A slight malty sweetness balances a dry and very mild finish which melds perfectly with its hazy appearance. Tropical, citrus, and stone fruit, and pleasingly floral character is marked with notes of big, dank, resinous Mosaic, Citra, and Amarillo hops. Enjoy! (Lakewood, NY)

Southern Tier 2XIPA

An India Pale Ale kicked up a notch to form a true Double IPA: feverishly hoppy with a malty backbone and higher-than-standard alcohol content. Citrusy hops tease the senses with aromatics and lingering bitterness, while just the right balance of malts disguises 2XIPA’s extra gravity.

We’ve been brewing 2XIPA since 2010, but it was in 2016 when we made this world-class double IPA perfect by increasing its Simcoe dry hop by 150%. This is an ale that doubles your expectations! (Lakewood, NY)

Sweetwater Et Tu Brute? IPA

The drama began when the long reigning Julius Dankster was met with a hostile enzyme, injected to take down complex sugars and allow the yeast to feast. But the betrayal had a plot twist: the brute intruder exposed the hop profile and stripped it of any sweetness, resulting in a dry-to-the-bone brew with a thick frothy head, hazy golden orange hue and slight tartness. In a shocking second act, El Dorado and Mosaic hops conspired to deliver a stab of mango, passion fruit, melon, acidic citrus, and the killer blow of dankness.

Allagash Saison

Allagash Saison is our interpretation of a classic Belgian farmhouse-style ale. Saisons were once brewed to slake the thirst of farmers returning from a long day of toil; they were spicy, light, and drinkable.

We brew this amber beer with a 2-row barley blend, malted rye, oats, and dark Belgian candi sugar. Northern Brewer, Bravo, and Cascade hops deliver a citrus profile with light bitterness. By fermenting with a traditional saison yeast strain, notes of spice and tropical fruit accent the aroma. Citrus and peppery spice balance its pleasant malt character. It’s hard being the sequel, unless you wrote the original story. Inspired by the continual hopping process we invented with 90 Minute IPA, 60 Minute builds on that one-of-a-kind process and flavor, crafting a solid gold hit that’s found its own identity.

Brewed using a boatload of intense Northwest hops, we boil this continually hopped IPA for a full 60 minutes, adding more than 60 hop additions continuously to create a bold and timeless flavor. Continually hopped to deliver a pungently, citrusy, grassy hop flavor without being crushingly bitter, 60 Minute IPA is a surprisingly sessionable IPA for the craft enthusiast.

Dogfish Head 61 Minute IPA

Sixty One was born at the crossroads of serendipity, experimentation and brotherhood.

Whenever Dogfish Head President Sam Calagione and his neighborhood friends gather for drinks, they give each other a big ol' man-hug and order a round of 60 Minute IPA. A few years ago, Sam also ordered a glass of his favorite red wine and poured a little into each pint of 60 Minute. They all dug the combination of fruity complexity and pungent hoppiness, and the blend became a beloved tradition.

Sixty One captures that tradition in a bottle and marries two Dogfish Head innovations: beer/wine hybrids -- which Dogfish has focused on for well over a decade with beers like Midas Touch and Raison D'être -- and continually hopped IPAs.

The name Sixty One is a reminder that this beer is Dogfish Head’s best-selling 60 Minute IPA plus one new ingredient: syrah grape must from California. The label, painted by Sam, is a twist on a typical watercolor. Rather than using water, Sam mixed the green pigment with beer and the red pigment with wine. And because Sixty-One pairs so well with chocolate, he painted the browns on the label with melted chocolate.

Dogfish Head 75 Minute IPA

It’s been a minute … but 75 Minute IPA is back! What began as a cask-conditioned ale at our Rehoboth brewpub back in 2011, quickly grew to become a cult-favorite amongst craft enthusiasts. From the groucho glasses that adorned the label to it’s slightly dry and lingering bitterness, 75 Minute was (and is) beloved by many.

Now in our latest iteration, this classic IPA is again brewed with maple syrup from Sam’s family farm in Massachusetts, while being continually hopped throughout the boil, and then dry-hopped with a slew of cascade hops. The result is a malty and earthy brew with citrusy-pine aromas, balanced by subtle maple notes. (Milton, DE)

This is the famous Brooklyn Black Chocolate Stout. In the 18th century, Catherine the Great, Empress of Russia, ordered a stout to be sent to her from England. This beer was brewed strong and hoppy to survive the sea voyage, and it arrived in perfect condition. Soon "Russian Imperial Stout" became the toast of the Russian aristocracy. Brewed since 1994, our Black Chocolate Stout has itself become a modern classic, heralded the world over. It achieves its dark chocolate aroma and flavor through the artful blending of six malts and three distinct mashes. Properly kept, it will improve in the bottle for many years. This stout is the toast of the winter season in many countries, and there is nothing better to enjoy with chocolate desserts, cheesecake, ice cream, fine cheeses and roaring fireplaces. When it came to creating Ripper, we drew inspiration from the coastal surf cultures of SoCal and Oz. At the same time, we stayed true to our San Diego roots by pushing the hop boundaries of this style. We took the original Chicory recipe, doubled the grain bill to hit 10% ABV, and tricked it out with all other sorts of delicious Breakfast-minded ingredients including lactose sugar (the sugar that lends Milk Stouts their character); barley malt smoked over local Fifer Orchards wood; maple syrup harvested from trees at Northfield Mount Hermon, the Western Massachusetts school where Sam and wife Mariah met; Steve’s Smokey Double Dark roast coffee from J & S Bean Factory in St. Paul Minnesota (a special nod to one of Sam’s favorite bands – The Replacements, who hail from Minnesota and wrote one of Sam’s most beloved songs: Beer for Breakfast); and for the quintessential Delaware breakfast touch – 25 pounds of Rapa Scrapple, which was added to the mash. Huge notes of coffee in the nose give way to sweet, smokey, and savory layers in the flavor which overlap bittersweet chocolate, roasty espresso, and malty undertones. Straffe Hendrik Quadrupel

Straffe Hendrik Quadruple is a rich and intense dark Belgian ale. It is brewed with a subtle blend of specialty malts, which give the ale an extremely dark color and a chewy, malty complex character. The quadruple combines a clean dryness with a warm full bodied mouth feel and essences of fruit. Secondary fermentation in the bottle creates a living ale that can be aged and will have an evolution of taste profiles over time. (Bruges, Belgium)

The original ale first brewed in 1965 and now sold all over the world. Perhaps the most distinctive Scottish ale on the market and with its rich dark oakiness, this is a serious winter ale. It is fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing. (Innerleithen, Borders, Scotland)

A mahogany colour, and a lasting, cream-coloured, finely pored head are the defining features of Köstritzer black lager beer. Its expressive fragrance evokes a range of intense spicy aromas, including sage, roasted chestnuts, dark honey, bitter chocolate and fresh, farm-baked bread. Dry on the palate, and marked by bitter-sweet herbal and toasting aromas. The intense aromas are balanced by the gently sparkling carbonation with freshness and elegance. Crazy Mountain Hookiebobb IPA

In the 1960s, before Vail Village was paved and closed to vehicles, "hookiebobbing" referred to those committed fools who, while on skis, grabbed onto the bumper of passing cars to tow them up to the lifts. Our IPA is a Colorado approach to the American take of an English classic. Three aggressive yet floral American hops and one hop from Down Under team together to make a bright, citrusy and floral India Pale Ale. Innis & Gunn Rum Aged

We are delighted to present this unique limited bottling of Innis & Gunn finished in oak barrels which previously contained navy rum. Maturation in special oak barrels imparts Navy rums with the sweet, spicy character for which they are renowned. We have long wondered what flavours might be imparted to our beer by finishing it in these same barrels and earlier this year we decided to find out. We brewed a special batch of Innis & Gunn beer and matured it in oak for 60 days. Every single drop spent half of that time in American oak barrels before being refilled into selected navy rum barrels to finish the lengthy maturation. Once the beer had absorbed the unique character the barrels were emptied, the beer blended and then maturation continued for a further 47 days until all of the flavours had married together and mellowed. We think the result is absolutely delicious!
